Shallow Fried Chicken Cutlets

Ingredients:

  1. 2 lbs chicken breasts sliced into thin fillets
  2. salt and pepper to taste
  3. 1/2 tsp dried Italian seasoning
  4. 1/2 tsp garlic powder
  5. 4 heaped TBs mayonnaise
  6. Panko style breadcrumbs, 2 cups
  7. Some oil for shallow frying

Sprinkle salt, pepper, seasonings and garlic powder over the chicken. Coat well. Then mix in the mayo and let marinate for 2-3 hours in the refrigerator. Heat oil to medium-high. Coat the chicken pieces with the breadcrumbs and fry until cooked on both sides. Serve hot with a side of home-made fries or assorted veggies.

 

Corn Salad

Ingredients:

  1. 1 cup of corn kernels from a frozen pack, thawed
  2. 1 medium golden potato, boiled, peeled and cut into cubes
  3. 1 Roma tomato, chopped
  4. 1/2 cup chopped cilantro
  5. 1/2 medium red onion chopped
  6. salt to taste
  7. 1 Tbs freshly squeezed lemon juice
  8. 1 tsp cumin seeds
  9. 2 Tbs Canola oil
  10. 1 Tbs home made tamarind chutney or 2 Tbs of store bought Tamarina by Maggi

Heat oil in a shallow pan. Add cumin seeds. As they splutter, add the onions, tomatoes and potatoes, and the salt. When the onions become transparent, add the corn. Stir for a few minutes. Add the lemon juice, tamarind chutney, and cilantro. Toss well and serve warm.
(Adding curry leaves and crushed red chillies along with the cumin seeds is optional for the extra zing!)

 

Chicken on Skewers

Ingredients:

  1. 1 lb of boneless chicken breast cut into chunks
  2. 1 Tbs garlic paste
  3. 1/2 Tbs ginger paste
  4. Salt to taste
  5. 1/2 tsp black pepper
  6. 1 Tbs lemon juice
  7. 1/4 cup raw papaya with skin, sliced finely (used as a tenderizer)
  8. 1/2 tsp paprika or a mild red chilli powder (for adults, 1 tsp crushed red chillies can be added)
  9. 1/4 cup cooking oil

Mix all ingredients. Marinate 3-4 hours, or overnight if possible. If using bamboo skewers, soak them for an hour in water. Thread the chicken pieces, 5-6  per skewer making sure there is enough room between each piece to ensure thorough cooking. Discard papaya slices. Preheat grill on high. After 10 minutes, reduce to low and place skewers on the grill. Cover and cook for about 10 minutes then turn. If chicken is sticking then wait another couple minutes. When all sides are done, turn off grill and let the chicken rest for 5 minutes before serving.

 

Deep Fried Shrimp

Ingredients:

  1. 1 lb deveined precooked shrimp with tail
  2. 1 large egg beaten
  3. 2 cups all-purpose flour
  4. 1 tsp salt
  5. 1 tsp black pepper
  6. 1/4 tsp cayenne pepper
  7. 1 tsp garlic powder
  8. 3 cups Panko breadcrumbs
  9. Oil for frying

Season the flour with the salt, pepper, cayenne and garlic powder. Heat oil in a wok or deep frying pan, then lower to medium-high. Coat shrimp with seasoned flour and shake off excess. Dip into egg. Then roll in Panko until coated on all sides. Fry in oil until golden brown. Serve with sweet chilli sauce.
